Black sesame seeds

Unhulled seeds of the sesame plant with a black coat, a little stronger and slightly more bitter in flavour than white sesame.

Black sesame is reliably found in Asian grocery shops and often in health food shops, organic stores or larger supermarkets, and it keeps well for a long time stored dry and away from light.

Substitute:

White sesame works anywhere but tastes milder and less earthy; where black sesame defines colour and flavour, as in porridge or paste, both are lost.
