Blue crab
A medium-sized swimming crab with blue-tinged claws and tender, sweetish meat.
Caution: Raw crabs spoil very quickly once dead, so use only crabs bought live or frozen straight after the catch.
Fresh or live blue crab is hard to find outside North America, but frozen blue crab or closely related swimming crabs turn up in Asian grocers, at fishmongers or through mail order.
Substitute:
Other swimming crabs, such as the frozen Pacific swimming crab common in Asian grocers, stand in almost equally well; brown crab also works but tastes stronger and has firmer meat, especially in the claws.
