Silken tofu

Unpressed tofu with a smooth, custard-like texture that breaks apart at a touch.

Silken tofu is sold in health food and organic shops, well-stocked supermarkets and Asian grocers, which also carry an extra-soft version packed in tubes.

Substitute:

There is no true substitute, because firm tofu stays dense and crumbly where silken tofu should melt into creaminess; soft tofu will do in soups at a pinch but never gets as tender.
