Short grain rice
Short, round japonica rice that cooks up soft and slightly sticky.
The right kind is sold in Asian grocers as Korean or Japanese rice, and in many supermarkets as sushi rice or Calrose.
Substitute:
Sushi rice is an exact match; pudding rice or risotto rice turn out too mushy or too firm, and long-grain rice does not stick and will not work.
