Soybean sprouts
Sprouted yellow soybeans with a large yellow head and a long stem, crunchy and mildly nutty.
Caution: Soybean sprouts are not eaten raw but always cooked through.
Soybean sprouts are sprouted yellow soybeans, noticeably larger and firmer than the mung bean sprouts that supermarkets often sell under the soy sprout name. They are sold fresh in Asian grocery stores, usually bagged in the chilled section, and should be used within a few days.
Substitute:
Mung bean sprouts will do at a pinch, but they are more delicate, less crunchy and lack the nutty bean head; they need only brief cooking.
